Celiac disease is an interesting and complex disorder of the small intestine in which genetically susceptible individuals through the ingestion of wheat containing foodstuffs trigger an inflammation of the intestinal lining which can result in weightloss and a variety of nutritional deficiencies. The process is mediated through the immune system. The treatment consists of following *forever* a *very* rigid diet which eliminates the offending proteins and allows the intestine to recover both in structure and function so that proper digestion of nutrients can occur.
